Employment Interview

Please list position(s) for which you are applying:

Chef/Kitchen Supervisor.

Please explain why you are applying for the position(s):

The restaurant industry has become increasingly demanding on me and my time. I feel a position in a facility such as yours, with a narrower focus and clearer demands, would be better suited to me at this time. I also have an interest in working with troubled kids and doing something special for them, even if all that means is filling their bellies with good food made with quality ingredients.

Why do you feel you would be the best candidate for the position(s)?:

I have seven years of experience in the Paris restaurant industry, working my way up from line cook to executive chef during that time. If I'm honest, I have a lifetime of experience in this area. It started when I was young, running around the house helping my mom bake and clean the kitchen. I used to love seeing how she did things, often accompanying her to the store to collect ingredients, and just by being an enthusiastic little helper wherever she needed me. After we moved to America, I sometimes helped my stepfather out in the kitchen of his restaurant, running errands, washing dishes, and learning how to cook. When I was 16, he officially hired me on as a swing cook, filling in as needed on various stations in the kitchen. When I wasn't needed to fill in, I worked various other jobs in the restaurant, sometimes as host, other times as waiter or bus boy.

Do you posses the necessary qualifications for the position(s) for which you are applying? If yes, please list them below:

I believe so. In addition to the years of experience I have under my belt, I earned my Bachelor's of Professional Studies in Culinary Arts Management from The Culinary Institute of America located in Hyde Park, NY.

What other qualifications or skills do you possess which you feel will aid your performance in the chosen position(s)?:

A superior work ethic and strong leadership skills. Also, I'm fluent in both English and French.

Have you worked in this type of position or facility before? If so, where and when?:

Yes. I've worked as executive chef for the past three years at a restaurant in Paris. I started out as a line cook, working my way up to sous chef and head chef before earning the position of executive chef. I attended culinary school from ages 21 to 25, drawing on the experience of working in my father's restaurant in Middletown, NY from ages 16 to 20. I continued to work there in a part-time capacity while I attended school an hour away, mostly on the weekends as a swing cook, but spent the majority of my time focusing on my studies.

Please describe your most recent employment experiences, including your positions there, company names, and locations:

Chez Nous, Paris, France - Executive Chef, August 2008-present
Chez Nous, Paris, France - Head Chef, March 2006-August 2008
Chez Nous, Paris, France - Sous Chef, March 2005-March 2006
Chez Nous, Paris, France - Line Cook, June 2004 -March 2005
DeAngelo's, Middletown, NY - Swing Cook, September 2000-May 2004
DeAngelo's, Middletown, NY - Swing Cook & Jack-of-all-Trades, May 1996-September 2000

How do you think your previous education and employment experiences will aid your performance within the chosen position(s)?:

I think they will allow me to see to it that the kitchen of Highgrove is run well and efficiently. As you can see by my resume, I have no shortage of experience, nor do I lack the qualifications necessary to be the best man for the job. Catering to the special needs of the children housed at your facility will only add to my experience and strengthen my unique capabilities.

Psychological Evaluation

Please describe yourself to the best of your ability, in only five words. ('And' will not count towards these.):

Thoughtful, focused, creative, adventurous, amiable.

What methods would you employ in order to relax during times of stress, and how effective do you think these have been in the past?:

I really enjoy art, particularly music. I play guitar and can pluck a few notes out on a piano as well. Unfortunately, I don't own the latter. When I'm stressed, I need to get away from people and be alone, so I either sit down with my guitar for a bit or hop on my motorcycle and go for a quiet drive. These are my healthiest coping mechanisms. They work wonders and calm me down in no time at all. Unfortunately, I have a couple of unhealthy mechanisms as well, which include a heavy smoking habit (cigarettes) and wandering down to the local bar for a drink or two. I wouldn't say I have a drinking problem, as it doesn't interfere with my work, but sometimes I wish I could relax without feeling like I need a glass of wine or a Scotch to soothe my nerves.

Please list three traits about yourself that you consider negative, and three traits about yourself that you consider positive. Explain these choices if necessary:

On the negative side of things, I can be a bit impatient and prone to melancholy. Most people wouldn't tell to look at me, since I'm friendly by nature and put on a patient, pleasant face most days, but I get pretty lonely. Work has been my life for so many years that I haven't had much time to make friends that last. Positive traits include my ambition and sense of adventure. I love trying new things and taking on challenges. I also have an insatiable thirst for knowledge, which could be seen as the third trait, both positive and negative. On one hand, it means I'm almost never bored, because I'm constantly seeking out new experiences and information; on the other, it means that when I am, and there's no excitement to be found, I get restless and moody.

Describe one event in your life that you would change if you could, and why:

I went through a rough patch as a teenager and treated my mother pretty terribly during that time, my stepfather too. He very easily could have fired me from my job, but he didn't. He kept me on and continued to teach me the value of hard work. Neither of them deserved the attitude I gave them on a near-constant basis. I had gotten mixed up in a trouble-making gang of local boys and used to stay out late into the night drinking, experimenting with drugs, and committing acts of vandalism. Luckily we were never caught in the act - or I wasn't, at least; the one time the cops came up on us I bailed in a rather cowardly fashion - but they knew something was going on even if they didn't know exactly what it was. I was a miserable wretch. My relationship with my parents was never quite the same after that. If I had it my way, I would have never let myself get involved with those kids.

If a superior gave you a task to complete, to which you were wholly, morally opposed, what would you do?:

Try to reach some sort of compromise with my supervisor before deciding whether or not I want to do the thing and keep my job, or refuse and lose it. I can be pretty stubborn and rash in situations like these, but this one isn't as black and white as I'd like it to be. I wouldn't want to sacrifice my integrity by doing something I'm morally opposed to, but would I be willing to risk unemployment by standing my ground without budging? I'm not sure. After all, I've been blessed in that I've never had to face the unemployment line. It would come as an unpleasant shock to suddenly find myself in that predicament. I wouldn't know the first thing to do. I'd definitely fight for a compromise.

If you caught a friend and co-worker stealing from your place of employment, breaking rules, and/or endangering the safety of others, what would you do?:

I'd be pretty upset, but I'd sit them down for a talk and give them a chance to redeem themselves if they seem willing to stop the destructive behavior. If it didn't stop, I'd go to their immediate supervisor with the knowledge and let them handle it from there. In the event I was their supervisor, I'd follow the same protocol in allowing them a second chance, but in the event of a relapse, I'd see no choice but to let them go. My kitchen is a sacred space, and I will not tolerate any violation of it. "Fool me once, shame on you. Fool me twice, shame on me."

Environmental Screening

Where did you grow up, and what was it like there?:

Taverny, France up until the age of 10, when my mother earned US citizenship for both of us by marrying an American man met she had met and fallen in love with a year prior while he was on holiday in Paris. He was a widower with no children, a good man, and she had been a widow since I was an infant, so it seemed like a perfect match. We moved into his home in Middletown, NY. Taverny was a fairy-tale town, only a stone's throw from the French capital with charm in spades and plenty to do. I loved it there. Middletown was not as enchanting. Half of the reason I ended up working with my stepfather so much was because there was nothing else for me to do. It wasn't too far from NYC, at least. My parents would take me into the city frequently, which kept me from going stir-crazy for lack of excitement.

What are/were your social interactions like? Do/did you have many friends and/or relationships?:

I had a reasonable amount of friends growing up in France. It was hard to start over again in America, not because I wasn't a friendly child but because I was more family-oriented than anything. I enjoy the company of friends, but I'm bad at keeping in touch with them. These days, I'm not so good at keeping in touch with my family either. My parents are still in America and international calls are expensive. Of course there are things like Skype, but we're not as close as we used to be anyway. I like socializing and have no trouble doing it, it's just keeping a good thing going that seems to be difficult for me.

What prompted you to pursue the career path you are now following?:

It came naturally to me, and felt like the right thing to do. I enjoyed it and was good at it besides, so why not?

Were you ever a member of the armed forces or of a law enforcement or security agency? If yes, please list rank and branch, or company name and location:

No.

Do/Did you ever abuse controlled substances, including but not limited to alcohol, prescription medications, street drugs and tobacco?:

I mentioned earlier that I was a rebellious youth, which included taking all kinds of drugs, some of which I didn't know the names for. It was risky business, but I reformed. I don't abuse drugs now, unless you count tobacco, in which case I smoke like a chimney. I drink in moderation.

Have you ever been convicted of a crime? If yes, please list conviction(s) and served sentence(s) below:

No.

Out Of Character Section

Is there anything your character isn't telling us? Do you have more information to add about your character that they would not tell the representative about? Please explain below:

Fabien still has something of a rebellious streak, though he wouldn't admit it so openly on a job application, and he drinks more than he lets on. He's not a raging alcoholic, but drinking is how he prefers to socialize. He has never been married or had children, nor has he successfully held down a long-term relationship with anyone. On top of that, he's in the closet about his bisexuality. He's been with men, but nobody knows. His group of friends in high school was compromised of a group of boys who were rather rough-and-tumble. They were also largely homophobic, which made him feel guilty about his secret desires for other young men. He's friendly but guarded, and doesn't like to talk about himself in much depth despite his loneliness. Though he doesn't go out looking for fights, he won't back down from a confrontation, and has suffered more than a few bruised knuckles and split lips on account of it. His inner world is full of turmoil and unrest, but he hides it well and likes to keep himself busy in order to distract himself from his deep-seated unhappiness. Cooking truly is one of the things that gives him peace. He feels most at home in the kitchen at work or home and doesn't stray far from either.
